Tupig (Street Food)

Tupig is a popular street food delicacy that is from the provinces of Pangasinan, Ilocos and Tarlac. It is commonly sold outside churches. You can eat tupig as a "merienda" (afternoon snack) or dessert and usually, grandparents buy tupig as a "pasalubong" for their grandchildren.

Ingredients:
2 cups glutinous rice, soaked overnight
1 cup brown sugar
1 cup young coconut, shredded into strips
1 cup coconut cream
1/2 margarine
oil
banana leaves, cut into the size of a magazine or book
Procedure:
• Drain the water from the rice then place it in a cheesecloth to remove excess liquid.
• Place in a blender, food processor, or with mortar and pestle and grind it until it becomes powdery. Sift to make sure it's fine.
• On a mixing bowl add brown sugar with shredded coconut and coconut cream, then add glutinous rice.
• Brush or rub banana leaves with a little bit of oil.
• Place 2 tablespoons of mixture an inch on the side then roll and fold the edges to avoid dripping. (This will be tricky as the dough is very runny, it takes practice).
• Place above a griddle or on top of the charcoal or any grill, turn once the other side is charred. (It is fine if the sides are unfolding because it is already cooked).
• Remove if both sides are charred and set aside to cool down or serve if it is still warm.
