Aligue Fried Rice

If you want to try out different types of fried rice and if you are busy and still want to have a hearty meal here is an easy fried rice to make.
It can also be partnered with halabos na hipon if you forgot to have a meal and still want to be full. It can also be combined with other types of seafood dishes.

Ingredients:
4 cups cold rice
3 heaping tbsp aligue
2 tbsp butter or oil
4 cloves garlic, minced
1 big onion, sliced
2 stalks spring onions, sliced
freshly ground black pepper
salt
Procedure:
• First things first separate the rice with your hands or with a rice paddle.
• In a heated wok, add your oil or melt the butter and sauté onion until it becomes transparent and then add garlic until the color turns golden brown.
• Add the crab fat and cook for a minute.
• Add the rice, mix well until the crab fat is evenly distributed.
• Season with salt and freshly ground black pepper
• Lastly, add spring onion and mix for 3-5 minutes then serve.

Tip: If you're gonna sauté onion and garlic, put in first the onion because garlic is small so it cooks fast and tends to burn if you add the onion. If you see a little transparency or whiteness on the onion then add the garlic so they can cook at the same time.
